Two reasons:
1. I don't want my water tasting like lemon. If I want something that tastes like lemon, I'll order lemonade. When I get water, I want fucking water not lemon-tasting water.
2. When preparing food at a bar, chefs often go from touching raw meat to touching lemons and putting lemon wedges right on your glass (recent study, wish I had a link on hand). One out of three lemon wedges tested positive for traces of feces and/or salmonella. Therefore, with a 33.33% chance of getting feces or salmonella in my water, I think I'll pass.
