What do the captions under the usernames mean? Also, how are they changed?

They're known as User Titles. Basically they change when you make a certain amount of posts. But you can also change it yourself through the store (vbPlaza (http://www.evboard.com/newreply.php?do=newreply&noquote=1&p=1067582&nojs=1#vbplazamenu)). Of course you need points to buy things in the store, and you get a certain amount of points with every post you make (except in the Introduce Yourself and EvBored forums).

Since you're new here, you might also want to make a thread in the Introduce Yourself forum. You'll have a Welcoming Committee member assigned to you to answer all your questions and help you become familiar with the place.
